As silly as it sounds, chili is actually an American dish! Although, most Americans wouldn’t be happy about us making chili vegetarian as it’s typically made with meat, hence the name chili con carne. But, I suggest we all try to let each other eat what our hearts desire, and this chili has its reasons to be in the world. With just the right amount of spice, it’s hearty and deep flavours will get you through any tough time. Well, at least for the time you are eating it. (Corn bread can be purchased separately)

    I bought a few of these with every intention to freeze some to save for future weeks …. but my hungry 16 year old eating maching had other ideas! This had a lovely deep flavour, not too spicey and we had it with some rice one time, solo another time, with some lamb mince another and it proved to be a perfect meal base as well as sufficient solo. When I get this again I think I may use it to make a chilli jacket potato lunch – that is if I can hide it from my teenager! Be sure to try this one when it next appears – very delicious, especially the fresh corn in it!
